Tucked inside the narrow streets of Chania’s Old Venetian Harbor, Colombo is not a place you search for — at some point, it simply finds you.
Here, the kitchen doesn’t follow trends. It follows the seasons, the farmer, and the quiet wisdom buried inside every Cretan recipe. The olive oil is local. The greens know which hillside raised them. And the flavor — that is not explained, it is tasted.
We don’t just serve food. We serve the way one eats well in Crete — with the respect that the land deserves, the place deserves, and the person sitting across from us deserves.
